What I eat in a day as a Wannabe Vegan.

It has been a while since I last blogged, I thought I would get back to it, while I have a bit of free time!

Lets talk about a big change in my life.

After talking about becoming vegan for the last 6 months, I have finally started the transition to a plant based diet. I am under no impression that it will be easy, but making small changes here and there means I am well under way. To document the sort of food I can eat, and the sort of food I have enjoyed I thought I would share with you one day in the life of my tummy.

Breakfast:

2 Slices of White toasted bread, topped with Peanut butter. 
Peanut butter is high in good fats and releases energy slowly (apparently). I like the peanut butter I use because it doesn't use any additional oils or preservatives, it's just 100% Peanuts. Plus a coffee, with vanilla syrup and milk. Unfortunately I didn't have any non-dairy milk so compromises had to be made for my morning coffee. I rectified this later in the day by buying some Almond milk.



Lunch:

I bumped into my Mum in town while I was shopping and we went for coffee. We went to Coffee #1 and had a flat white each, mine with soya milk of course. I wonder if any coffee shops stock more than just soya? I'm not the biggest fan, I much prefer coconut or almond milk.

When I got back, I had a wholemeal pitta cut in half and stuffed with hummus, rocket and cherry tomatoes. I had some Balsamic vinegar Potato Crisps on the side, which were super tasty!




Snacks: 

Snacking is where I have struggled until now.

Today for snacks I had some dried banana chips, some chilli flavoured rice crackers and some mini rice cakes with hummus on top. Obviously this wasn't all at once!




Dinner:

I have to admit, I had a lot of snacks today so I wasn't too hungry for dinner. I had a pack of rice and veg, seasoned with some soy sauce, sweet chilli sauce and garlic, and topped with rocket and tomatoes.



I'll probably just have water now until bed. Obviously drinking water is good for you, but if you are a little bit of an over-eater like I am (understatement) a lot of feeling hungry is actually because you're dehydrated! So my plan is to drink at LEAST 3 1/2 pints of water a day which will keep back those fake hunger pangs.

I might write about why I came around to the idea of living on a plant based diet. I know that there's lots of people that are confused as to why anyone would consider Veganism, and I know I have already had a lot of negative comments, just for talking about it. The facts are very interesting once you get researching, a real eye opener, but there is lots of controversy on the subject too.

For now I will leave it at this, and I look forward to writing more about this in the future.
